I’m a big fan of Happy Cakes, Julia’s cakes are always amazing and she’s a big supporter of other local businesses too.
I once gave her a brief for a 5-year-old’s birthday cake of superheroes & rainbows. On the day of the party, we cut into a superhero decorated cake to find a surprise bright rainbow layered filling inside. The kids – and parents – gave the most gigantic gasp. Truly magical and bloody delicious too!
Anyway, I digress. Today we have a recipe from Happy Cakes for Jam Donut Muffins – your only challenge (other than just eating one) will be not licking your lips till you finish! – Jacqui
How to make Happy Cakes’ Jam Donut Muffins
You will need:
- 125ml milk
- 85ml vegetable oil
- 1 egg
- 0.5 tsp vanilla extract
- 200g self-raising flour
- 100g sugar
- 8tsp raspberry or strawberry jam
For the topping:
- 50g melted butter
- 100g granulated sugar
With a fork beat together milk, oil, egg & vanilla.
Stir this into the self-raising flour and sugar to just combine. It will be lumpy but don’t over mix.
Divide half the mix between 8 muffin cases and dollop in 1 tsp jam.
Add the remaining mix and bake at 180℃ for approx 18 min.
Allow to cool, then dip the tops of the cakes into melted butter, then sugar.
And remember… Try not to lick your lips while you eat them!
